Stir Fried Bean Sprouts (Moyashi Itame)


Embracing all of the dietary principles for spring, stir-fried bean sprouts are a tasty side dish that can complement a dinner. Many recipes are available, but here is one that is particular good for the Liver system.

Actions:

  • Nourish and Harmonize Liver
  • Preserve Yin

Serves 4

Ingredients:

  • Bean Sprouts:     3 cups
  • Wood Ears:     1/2 cup
  • Carrot:     1/2 cup
  • Button Mushrooms:     1/2 cup
  • Green Onions:     2 stalks
  • Garlic:     1 piece
  • Salt:     2tbsp
  • Canola oil:     2tbsp

Directions:

  1. Rinse all vegetables; chop mushrooms into ¼-inch slices; shred carrots and wood ears to matchstick size; chop garlick
  2. Preheat canola oil over high heat in a frying pan or wok; add garlic and green onions and fry until fragrant.
  3. Add all vegetables and cover for 1 minute; removing lid, stir fry until mushrooms are soft.
  4. Sprinkle salt and transfer to a serving dish



Herbs Used


Huang Qi (Astragalus)is a strong immune booster.


Gou Qi (Wolfberry) is generally nourishing.

Green Onions promote a smooth flow of Liver Qi

Wood Ears nourish the Yin of the body
